True to its name as the food tech hub of Southeast Asia, Singapore’s gastronomic scene continues to explode with a variety of restaurants and menus to choose from. With COVID restrictions now eased, dining around the vibrant city has never been this exciting.

The Coconut Club

Elevating the goodness of coconut from its former lodgings in Ann Siang Hill, The Coconut Club has now moved to the triple-storey shophouse located on Beach Road. Enjoy the creamy goodness of the restaurant’s crowd favorites, which include their Signature Kuehs, Nasi Lemak, and Ketam Masak Lemak Cili Api.

White Marble by Otto

Bringing to Singapore the best gastronomy of the Mediterranean, this newly-opened grill restaurant is the newest concept by Chef Otto Weibel. Falling head over heels with the picturesque scenery, warm culture, and fascinating cuisines of the Mediterranean region, the F&B veteran brought to Singapore all the wonderful experiences he had from the Middle East, Southern Europe, and Northern Africa. The 120-seater restaurant is prominent for its quintessential Eastern Mediterranean Mezze Platter of tabbouleh with quinoa, fattouche, hummus, chicken skewer, pita, and eggplant moutabal. There’s also the classic Moroccan stew that has been slow cooked in the traditional earthen pot flavored in the medley tastes of lemon, dates, olive, capers, and tomato. White Marble also has a variety of options for skewer, including seafood, Australian lamb, and Black Angus beef, to name a few.

Poisson

French for ‘fish’, Poisson offers an unforgettable seafood experience to all of its diners with its international cuisines inspired by the distinct seafood menu of France, Japan, Thailand, Britain, and Belgium. Poisson’s interpretation of the classic seafood dishes brings a creative flair to the original recipe. Top picks include the Blue Ebi (raw blue prawns cured in spring onion and topped with Bafun uni and Kaluga Queen Hybrid Caviar), The Game (dish named after the groundbreaking Netflix show, Squid Game, that is made from deliciously grilled baby squid marinated in garlic and complemented with sweet onion, tomato puree, and lice for spice, and Cured Salmon Trout (prepared with young beetroot, fennel, and ricotta).

Kaarla

With authenticity at its core, Kaarla puts to spotlight the importance of fire in their craft. The restaurant and bar offer Coastal Australian produce – that mainly features the rich seafood and agriculture industry of the region. The stunning vista of the newly opened restaurant located on the rooftop of CapitaSpring:1-Arden is best paired with sourdough damper with macadamia spread, lardo, and lemon balm. Another top pick is the Sydney rock oysters with house-fermented fig leaf and oyster plant vinegar. The restaurant also offers exquisite house salt-cured kangaroo spiced with black barley and finger lime. JAAN by Kirk Westaway

The internationally celebrated two-Michelin-starred restaurant helmed by Kirk Westaway promises an elevated reinterpretation of British cuisines through a modern and innovative culinary lens. Highlighted in the restaurant’s celebration of spring’s bounty are the exquisite dishes like white asparagus and caviar, Scottish Langoustine topped with fresh dill and served with green asparagus and warm seaweed mayonnaise, and Guinea Fowl with herb potato.
