After cementing the top spot of the World’s Best Restaurant in 2019, the world-renowned chef Mauro Colagreco of Mirazur opens a brand-new restaurant concept in Singapore that burns with passion, craftsmanship, and culinary traditions.
FIAMMA, which translates to ‘flame’ in Italian, is one of the most anticipated restaurants to open in the second quarter of this year. Located at the beachfront of Capella Singapore, this new venture of the three-Michelin-starred restaurant owner is his second established partnership with the Capella brand – after the success of Côte by Chef Mauro in Capella Bangkok in 2020, which has been recently awarded one Michelin Star last December of 2021.
For this new restaurant, Chef Mauro takes inspiration from the cooking of his grandmother. Enthused to share the same experiences and memories of his youth, he brings together the hearty flavors of warmth, a familial bond, and the timeless charm of home through his refreshing take on the authentic and traditional Italian cuisines.
The FIAMMA menu breathes new flavor and texture into the timeless heritage reverberating through the Italian family kitchen. Each dish speaks of nature’s beauty and the wonders of preparing fresh, well-sourced ingredients. Capella Singapore’s herbs garden perfectly complements Chef Mauro’s penchant for painting nature’s vitality on a plate.
